I would also add that many of those height/weight charts were compiled with figures from the early 20th century. Improvements in nutrition have given us more height and denser bones, etc.

Yep. I remember when I was a kid trying on vintage and antique clothes from late 1800's to mid century. No one among my friends and I were overweight, but those old clothes were built for far slighter people with generally small shoulders, smaller ribcages and less muscle mass. As a costumer looking through historical patterns, I see the same phenomenon.
